Water chestnut pickle recipe

Material

  • 200 grams water chestnut pickle
  • 50 grams- peanuts
  • 1 teaspoon coriander
  • 1 spoon- gram dal
  • 1 spoon- urad dal
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon fennel
  • 1 teaspoon cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon fenugreek seeds
  • A pinch of asafoetida
  • 3- Whole dry red chilli
  • 7- Green chilli
  • 1- Garlic
  • 5- Curry leaves
  • 2 spoons- lemon juice
  • Salt to taste
  • 5 spoons oil

Method

To make pickle, first wash the water chestnut and then cut it into small pieces.

Now for tempering, add peanuts, coriander, fenugreek seeds, cumin and fennel in a pan and brown all these ingredients on low flame.

Now add other ingredients like green chillies and garlic and cook on low flame for one to two minutes.

Then take it out in a bowl and grind it coarsely in a mixer.

Now add this mixture to the water chestnut pieces and then add salt as per taste and mix well.

Put 1 to 3 spoons of oil in a pan and heat it. Then add mustard seeds, chana dal, urad dal, curry leaves, dry red chilli and asafoetida to add tempering.

Then fry it well. When it is roasted, add turmeric powder to it and fry for some time.

Now turn off the gas and add this tempering to the water chestnut pickle. Then add lemon juice to it and mix well.

Your spicy water chestnut pickle is ready. You can store it in a jar.
